I don’t know about the rest of you, but we “grab and go” from restaurants far too much during this hectic time of year. I get cravings for fruits, vegetables, and greens after going to events with delectable baked goods, sweets, and cheesy dips.
A Healthy & Delicious Holiday Side Dish
The main attraction are holiday side dishes including mac & cheese, mashed potatoes, and stuffing. But this Christmas salad is so light and crisp that it’s a great addition to your classic Christmas meal, or even served with a casserole for breakfast on Christmas morning. Additionally, it is incredibly quick and simple, so you won’t miss the thrill of opening gifts.
Today on The Morning Show, my buddy Merritt from The Kitchen Transition (nudge, nudge, follow her at that link for more delectable recipes) joined me for a taste test, and I wholeheartedly endorse it! She is even referred to by me as “The Queen of Vinaigrettes.” This is the easy yet incredibly delicious recipe:
Merritt’s Orange Vinaigrette Winter Salad
Ingredients for Orange Vinaigrette
Three ounces of olive oil
One navel orange yielded two ounces of fresh orange juice.
White balsamic vinegar, 1 ounce
One tablespoon of honey
One tablespoon of Dijon mustard
Ingredients for Winter Salad with Orange Vinaigrette
Five ounces of your preferred salad green, such as arugula. Arugula is suggested because it offers a pleasant spicy flavor.
Cut one honey crisp apple into matchsticks after slicing it 1/8 inch thick.
3/4 cup toasted walnut pieces
One cup of cranberries, dried
Six ounces of crumbled feta cheese
This salad has the advantage of being adaptable. If desired, Merritt recommended adding bacon or pomegranate. The dressing should be the main attraction, but you can be inventive with the embellishments.
In a mason jar, combine all the ingredients for the salad dressing. Using a fork, whisk thoroughly until emulsified. If desired, add extra lime juice to taste.
Combine your arugula and the rest of the salad ingredients in a serving bowl.
Pour the salad dressing over it. Serve and savor!
